This is another relatively new Texas product, produced by the Yellow Rose Distillery just outside of Houston. The nose is a little musty with oak and perhaps burnt marshmallow. The taste is sweet, smooth and quite light with corn syrup and toasted oak. Seems young and lacks some body and depth and tastes like “corn and toasted wood”. It has not had enough time to integrate and develop new flavors. The finish is dry, bitter oak, rye and pepper. Good, but not yet great, my notes say “unfinished”. Still an interesting stop on the journey but hopefully not the destination.
